For the pie recipe you will need:

  • wheat flour - 250g
  • salt - 1/2 tsp
  • butter - 125g
  • water (very cold) - 4 tbsp.
  • smoked fish (trout, halibut) - 150g
  • milk - 125 ml
  • water - 125 ml
  • salt, black pepper (freshly ground) - to taste
  • egg - 3 pcs.
  • cream - 125g
  • nutmeg - to taste
  • fat (to lubricate the form) - how much will it take
  • flour (for rolling dough)
  • butter (chopped with cereal).

Pie recipe:

To cook a smoked fish pie is necessary.

Pour flour for the dough into the pan and mix with salt. Chop the butter with cereal and spread on flour. Add water. Quickly knead the dough with your hands. The butter should fully combine with the flour. Roll the dough into a ball, wrap in a film and put in the refrigerator for 2 hours.

For the filling, pour the smoked fish with milk and water. Bring to a boil, then drain and set aside. Peeled and crushed dried fish into pieces. Beat eggs, cream and 125 ml of fish stock and season with salt, pepper and nutmeg.

Heat the oven to 200C. Grease a tartlet or baking dish with a diameter of 25 cm.

On a floured board, roll the dough into a layer slightly larger than the shape. Carefully lay out the bottom and edges of the mold with dough. Put the pieces of fish on the dough and pour over whipped egg-cream mass. Spread the butter chopped with cereal on top. Bake the cake in the middle of the oven for 30-40 minutes until golden yellow, cool slightly and serve.

Tip: an even more noble taste with salmon pie. Smoked salmon fillet is placed on the dough, poured with whipped cream and egg and put in the oven.

Step by step recipe

Cook rice until cooked in salt water.

Melt 35g of butter, add orange juice, beat with a fork, pour into rice, mix.

Cut the leek, fry in the remaining butter for 2-3 minutes.

Finely chop eggs, mix with onion and rice, add finely chopped dill, mix thoroughly.

Roll one sheet of puff pastry, put a layer of rice on it, evenly distributing it.

Lay on top slices of salmon, freed from skin and pits.

Grease the edges of the dough with yolk, cover with a second rolled sheet of dough, pinch the edges.

Make cuts on the pie, or pierce with a knife in several places.

Grease the cake with yolk and put the bake in a preheated to 200 * oven for 35-40 minutes.
